MAKING LEMON CURD

So, here's a wonderful, YUMMY recipe I had to share with you all.
A great way to use your FRESH EGGS!! Quick and delicious...enjoy on hot buttered SCONES OR ROLLS with your afternoon cup of TEA!




LUSCIOUS LEMON CURD

* Prep Time: 10 Minutes
* Cook Time: 10 Minutes
* Difficulty: Easy

Ingredients

* 6 Tablespoons Unsalted Butter, At Room Temperature
* 1 cup Sugar
* 2 whole Eggs
* 2 whole Egg Yolks
* ¾ cups Fresh Squeezed Lemon Juice

Preparation Instructions

Cream the butter and sugar with a mixer until it’s light and creamy (a few minutes). Add your eggs in one a time, mixing well after each addition. Add in lemon juice and mix together. Note: the mixture will look like cottage cheese but will become silky and smooth during cooking. Transfer the mixture into a heavy-bottomed sauce pan. Heat the pan over low-medium heat for approximately 10 minutes until the mixture thickens, stirring often. If the mixture is not thickening, increase your heat slightly and continue to stir.

Transfer the cooled mixture into a mason jar with a lid and refrigerate.

Even more snow!

It looks like we got 7 more inches last night. Good thing it's light and fluffy! Had to broom off the car and shovel the drive for hubby around 8 AM, and the plow hadn't even gone down our road yet! (You know you live in the sticks when the plows don't visit!) Fed the chickens, and they went right back into the coops to stay warm. Wild birds are flocking around the feeders now, to pick off the leftovers. Cardinals, woodpeckers, juncos, blue jays, chickadees, all sorts. Poor little half-frozen things! It must be so hard to find food when everything's buried under snow! I put some pics up on our facebook page, here are a few to share with you...

1> Old door on the carriage house...soon to be our farm store!
2> New barn stalls in the old barn next door, where our angus calves live until spring!
3> Our ducks enjoying their new haybale/twig shelter.
4> My pet bantam chickens...tiny and so so cute!

Latest and Greatest

Good day everyone!
Today I'm showing off my absolutely adorable, NEW custom-made egg-collecting APRON, from fellow MJF farmgirl, CJ.  Order one like it today at ceejayarm@yahoo.com!  The pocket holds a FULL DOZEN EGGS!
ALSO, here are a few of my newest hand-painted SIGNS, there will be more for sale at the GRAND OPENING of our FARM STORE this SPRING, so watch for the date!
Hope you're all staying WARM & TOASTY, our woodstove here is full and cranking out the heat!
The chickens aren't leaving the coops, just flying down to get food and huddling up for warmth...SMART CHICKENS!
The girls and I are busy baking COOKIES...mmmm....they smell divine!  Dust off your mixing bowls, too...it's so much fun!  (Even if the rewards don't last long around here!)

HAPPY NEW YEAR EVERYONE!!!

Just getting a fresh dusting of snow here on the farm.
Our kids are excited...they've been dying to go sledding, and we certainly have the hills here for that!
We hope you all had a wonderful holiday season, and Happy Three Kings Day yesterday to all of you who celebrate it!  Our chickens are exploring the snow, too...while the ducks simply take it in stride.
